Easy Making Blueberry Cheese Cupcakes Using G2.1 Optimum Blender

It is always easy using my Optimum G2.1 Blender. Here is the recipe which I used to make my blue berry cheese cake in less than 10 minutes




Ingredients
250g Cream cheese, room temperature
65g Dairy whipping cream
55g Caster sugar
2 large Eggs + 1 egg yolk
1 tsp Lemon zest
1 tsp Lemon juice
1 tsp Vanilla exract
2 tbsp Plain flour
100g Blueberry filling (store buy)

Instructions
1. Preheat oven to 160 deg C. Line muffin pan with 12 paper cases.
2. Using my G2.1 Froothies Blender, beat cream cheese and sugar at low speed (speed1) . Gradually add in whipping cream and beat the cream cheese at  (speed 2) to smooth and creamy. Add lemon zest, lemon juice and vanilla extract, and let it blend for 5 seconds.
3. Add eggs one at time. Beating well after each addition until just combined. I blend them use Speed 1 . Lastly add 2 tablespoon of plain flour into it and mix well and blend for another 5 seconds in Speed 1
4.Divide cream cheese mixture evenly into cases. Bake them at 160 degrees for 15 minutes.
5. Top cheesecake with blueberry filling (bought in stall) over it and place in refrigerator to chill for at least 2 hours. Decorate the cake as desire before serving.
